With kale and spinach

By: Vegan Agility Team Last updated: December 6, 2020
Do you ever feel lethargic just after lunch, with the urge to have that regular afternoon coffee, simply to keep your eyelids from slamming shut at your desk?
Sounds like something from the beginning of a cheesy advertisement but this was honestly how I used to feel before I began regularly making my green juice recipe for energy in the mornings. Constantly tired, demotivated, and low on that oomph that I needed to feel vitalized throughout the day.
I can truly say I was not the most fun person to be around when my energy was depleted.
There were a multitude of things that went into getting my energy levels stable and healthy again, like regular exercise, meditation, and a consistent routine. But one of the biggest contributors that changed my energy for the better was my food choices.
Now I’m not saying everyone should adopt a plant-based diet, but I am a testament to the fact that incorporating much more quality plant foods into your diet can have a profoundly beneficial effect on your wellbeing.
Studies have shown that a diet high in fruits and vegetables can help to reduce the risk of prevalent diseases like cancer and heart disease. While research has also shown that a diet high in plants helps to foster a much healthier and efficient digestive system, resulting in better energy management and potentially a little less weight on the waste.
So to help those of you in a similar situation to where I used to be, I have put together an energizing green juice recipe using only ingredients that evidence has shown to have beneficial effects on energy levels.
Ingredients and energy benefits of our green juice recipe for energy

Spinach
- Spinach is one of the most popular leafy greens, especially here at vegan agility. We can’t get enough of this versatile vegetable that works well in a long list of plant-based recipes.
- When it comes to balancing energy levels, spinach can work wonders thanks to the high essential mineral content, particularly iron. A healthy supply of iron allows your body to utilize oxygen more effectively, resulting in more efficient energy usage.

Kale
- Like spinach, the popularity of kale can’t be denied. It’s used in a variety of fantastic recipes, from vegan salads to delicious plant-based sandwiches and works brilliantly in a lightly pan-fried garlic kale dish. When it comes to making a green juice for energy, kale sits comfortably alongside spinach as a great food choice thanks to its large supply of iron, which helps to support optimal oxygen usage and reduce symptoms of fatigue.
- Kale is also high in the antioxidant quercetin, which has been shown to support more efficient energy expenditure and increase stamina.

Apples
- Apples are a great fruit to combine with leafy greens for their beneficial energy properties. Apples present your body with healthy fuel through its carbohydrate content without causing blood sugar spikes. This allows your energy to stay stable and prevents those pesky drops in energy that make you want to nap after consuming a high carbohydrate meal. The high water content in apples is also wonderful for preventing dehydration, enabling your body to make sufficient use of its energy reserves.

Ginger
- This delicious root vegetable adds a delightful yet slightly fiery flavor to this green juice recipe for energy while also boasting some wonderful nutritional properties that can help to boost your energy levels.
- Ginger has been shown to help improve blood flow while also having the capability to stabilize blood sugar levels, which both help to boost and maintain optimal energy balance.
Kitchen tools
This recipe works best with a slow juicer like the Omega nc900, but if you currently have no juicer, a blender can do a decent job with the help of a few additional steps.
